Fried Aipim

This past week my mother was in town visiting. She doesn’t come out this way often, so we always make the hour drive to a small, popular Brasilian cafe when she’s here. With no high chair, we had to feed Baby J on our laps. He had a sampling of each of our plates, but his favorite food was the fried aipim (yucca). It was not breaded at all and just lightly pan fried.

The aipim was already cut in strips, which made it perfect for little hands. It was soft enough that it fell apart in J’s mouth really quickly and he devoured it fast. I may try to find some aipim and experiment with baking it later.
