One of our time-honored traditions in our household is Breakfast for Dinner. As a kid, I [loved] this time because I’m a sucker for breakfast food. In fact, during my pregnancy with Olivia, that was what I craved the most – cereal, bacon, eggs, waffles, donuts, etc.

I had baked off a full pound of bacon a few days before for use in sandwiches and salads or just as a snack by themselves. My husband used the fat I saved to make us some lovely peppery scrambled eggs, homemade hashbrowns with bits of apple laced in them and….
MORE BACON.

We love bacon in this house.
Olivia did not hesitate and pretty much shoveled handful after handful into her mouth of eggs, bacon and hashbrowns. It was a happy, greasy mess but oh so fun.

I think Breakfast for Dinner will be easily passed down to the next generation.





I LOVE breakfast for dinner. It often happens here if we haven’t been grocery shopping for a while, and all we have left is eggs and bacon (and stuff for making coconut flour pancakes). Recently I called my husband and said, “I didn’t get a chance to go grocery shopping. Is pancakes and bacon for dinner ok with you?”
He answered, “Emily, you don’t have to ask me that. Brinner (breakfast for dinner) is ALWAYS okay with me.” hehe
Anneliese is gonna be a Brinner girl too, I’m sure.
did you do whole eggs? I have been wanting to give Capri bacon for a while, I think I will next time we have it. and those hashbrowns sound yummy, you should post a recipe.
Yes I do! We have no egg allergies in our family and she was exclusively breastfed for 6 months. According to the AAP’s revised guidelines, she can have anything she wants! Which is great and easy for us.

You can tell Olivia will grow up to be a connoisseur of fine foods, she seems to be totally enjoying the bacon!
